FORDOUN DATE MINCE PIES

These crispy little cakes are stuffed with dates and are similar to mince pies in appearance. Makes 14 pies.

PASTRY:

  • 500ml Cake Flour
  • 50ml Cornflour
  • 50ml Icing Sugar
  • 175g Butter
  • 1 Egg
  • 2ml Vanilla Essence
  • Extra Icing Sugar

FILLING:

  • 250g Pitted Dates (Chopped)
  • 5ml Lemon Juice
  • 50ml Water
  • 75ml Chopped Walnuts

INSTRUCTIONS/ METHOD:

Preheat oven to 180 °C. Grease a patty pan tray tin.

Make the filling first. Put dates, lemon juice and water into a small saucepan and heat gently until dates are soft and can be mashed. Add nuts and cool. Set aside.

Sift flour, cornflour and icing sugar. Rub in butter. Beat eggs and vanilla and add. Mix well and knead into a ball – do not add any liquid. Roll out thinly on a floured board and cut into 5-7cm circles. Place pastry into greased patty pan tray and spoon date mixture into the pies. Top the pies with their lids and press the edges gently with a fork.

Brush the tops with a little milk or beaten egg.

Bake for 20 minutes until golden. Leave to cool and dust with icing sugar.

Will keep for 3 to 4 days in an airtight container.
